Cooking in Tandoor

The fire and culinary is a representation of cooking in Tandoor. Tandoor is a cylindrical standing oven where temperature can reach 480’o C and food is cooked with the combination of live fire (Grill), radiant heat (Oven) and hot air (Convection).

Cooking on the fire is an ancient cooking art which human learned gradually. During the mankind Journey, Tandoor was discovered in Northern India and traditional cooking has always been the soul of great taste and recipes.

Located in Gopeng St, Sona’s Grill is among the only Indian restaurants in Singapore serving authentic Papdi chats explaining the recipe is very much inspired from its far cousin dahi vada recipe. basically the way the yoghurt, green chutney and red chutney are used in this recipe is very similar. however, the recipe is further extended by adding other ingredients like tomato and onions make it very unique. I personally like the combination of the crispy texture of flat papdi or puri with spicy, sour and sweet wet ingredients. This recipe is an ideal choice to be served for guests as it hardly requires more than 10 minutes if papdi and chutneys are handy. Our recipe calls for making your own papdi, which are then topped with yogurt, potatoes, mashed chickpeas, vegetables, and chutneys. Find prepared chutneys and serve in some upscale grocers, Indian stores, or online, but don’t miss out on the wonderful crunchiness these little noodles add to your dish.
